Ingredients:
-1/2 cup (1 stick) butter, softened
-3/4 cup peanut butter
-1/3 cup packed brown sugar
-1/3 cup granulated sugar
-1 large egg
-2 teaspoons vanilla extract
-2 1/4 cups all-purpose flour
-1 teaspoon baking soda
-1/2 teaspoon salt
-3/4 cup granulated sugar for rolling
-1 (6-ounce) package (1 cup) semisweet chocolate chips
Directions:
1. Preheat oven to 375°F.
2. In a large bowl, beat butter, peanut butter, brown sugar, and 1/3 cup granulated sugar until blended. Beat in egg and vanilla.
3. In a separate bowl, combine flour, baking soda, and salt. Gradually add to butter mixture, beating until blended.
4. Shape dough into 1-inch balls. Roll in the 3/4 cup of granulated sugar and place 2 inches apart on ungreased cookie sheets.
5. Bake for 10–12 minutes or until lightly browned. Immediately press the center of each cookie with the end of a wooden spoon.
6. Place 1 piece of the chocolate chip in the center of each cookie. Let cool on cookie sheets for 5 minutes; remove to wire racks to cool completely.
